The Evolution of Espresso: From Invention to Global Phenomenon

Espresso, a unique coffee brewing process, involves forcing high-pressured hot water through very finely ground coffee beans to produce a concentrated, flavorful beverage. This innovative method, known for its intensity and richness, has a fascinating history that dates back to the late 19th century.

The journey began in 1884 when Angelo Moriondo, an Italian inventor from Turin, submitted a patent for the first machine designed to brew large batches of coffee using steam and water. This invention was named "New steam machinery for the economic and instantaneous confection of coffee beverage, method 'A. Moriondo'." Despite its groundbreaking nature, Moriondo’s machine was never produced commercially, and no examples of it survive today.

The development of espresso as we know it today can be attributed to a Milanese inventor in the early 20th century. Luigi Bezzera, a businessman keen on improving coffee brewing efficiency, was experimenting with different methods to make his coffee faster. In 1901, he patented an improved espresso machine, which led to the creation of the drink known as "caffé espresso." The term "espresso" translates to "pressed out coffee," referring to the high-pressure process of pushing water through finely ground coffee.

Bezzera's motivation was rooted in his desire to reduce the time it took to brew a cup of coffee in his manufacturing business. By adding steam pressure to the machine, he discovered not only a quicker method but also a way to produce a much stronger and richer coffee. In 1903, Bezzera owned a manufacturing business and faced frustration with the slow brewing process. His innovation significantly cut brewing time while enhancing the drink's strength and flavor.
In 1905, Desiderio Pavoni bought Bezzera’s patent and began producing espresso machines commercially under the brand “La Pavoni.” Pavoni's efforts led to the commercialization of the world's first espresso machine, making its debut at the 1906 World’s Fair in Milan. This event marked the first time the public experienced coffee made expressly for them, hence the name espresso. Bezzera and Pavoni had successfully built a machine with a vertical boiler capable of brewing a single cup of coffee in seconds.

The popularity of espresso quickly spread beyond Italy. In 1927, the first espresso machine was installed in the United States at Reggio's in New York, a "La Pavoni" machine. By the 1940s, the process of making espresso had been refined to what is known and loved worldwide today.

The evolution of espresso from Moriondo’s initial concept to Bezzera and Pavoni’s commercial success demonstrates the innovative spirit and continuous improvement in coffee brewing technology. Today, espresso stands as a testament to Italian ingenuity, enjoyed by coffee enthusiasts globally for its bold and robust flavor.

The Invention and Evolution of Margarine

The invention of margarine dates back to 1869, when French chemist Hippolyte Mège-Mouriès created it in response to a challenge issued by Emperor Napoleon III. Napoleon III sought a cheaper and more stable substitute for butter to provide for the armed forces and the lower classes, as butter was both expensive and perishable. Mège-Mouriès, drawing on his background in chemistry and food science, developed a product made from beef tallow. This substance, a form of animal fat, was readily available and cost-effective, making it an ideal base for the new butter alternative. He named his creation “oleomargarine,” a term derived from "oleum," meaning oil, and "margarites," the Greek word for pearl, reflecting the product’s pearly appearance. The name was later shortened to margarine, which has since become a staple in households around the world.

After patenting his invention, Mège-Mouriès attempted to commercialize margarine in France, but he faced significant challenges. The French market was slow to embrace the new product, partly due to cultural preferences for traditional butter and partly because of the dairy industry's resistance to a competitor. In 1871, facing limited success in his home country, Mège-Mouriès sold the patent to the Dutch company Jurgens. This company, which would later merge into Unilever, saw the potential in margarine and began to develop and market it more aggressively. Around the same time, a German pharmacist named Benedict Klein founded the first margarine factory in Germany, producing brands like Overstolz and Botteram, further establishing margarine’s presence in Europe.

Margarine’s composition evolved significantly over time. While it was initially made from animal fats, by World War I, manufacturers began incorporating vegetable oils, such as cottonseed and soybean oils, into the recipe. This shift not only improved the product’s texture and flavor but also made it more accessible to a broader audience, especially during periods of butter scarcity. The Great Depression and World War II, in particular, saw a surge in margarine consumption as these economic and global challenges made butter more expensive and harder to come by.

Despite its growing popularity, margarine faced significant opposition from the dairy industry, leading to a series of legal battles and stringent regulations. In the United States, some states enacted laws requiring margarine to be dyed pink, making it less appealing and ensuring that it could not be easily confused with butter. These laws were part of a broader effort by the dairy lobby to protect the butter market. However, as time passed and consumer preferences shifted, margarine became more widely accepted. Its affordability, longer shelf life, and versatility in cooking and baking have ensured its place as a popular butter substitute in many households today.

Invention of airtight food preservation by Nicolas Appert

The idea of using a sealed vessel as an integral part of a food preservation process rather than as a merely convenient storage receptacle was seize upon and developed by the Frenchman M. Nicolas Appert ((17 November 1749 – 1 June 1841). In the early 1800s Nicolas Appert established an operation in Massy, La Maison d‘Appert (House of Appert, devoted to food preservation.

By 1804 this operation was a functioning as a full scale canning plant, the first in the world. It included a farm so that food could be preserved as the same location in which it was grown.

In 1795, the French Directory which ruled France decided they need to find a better way to ensure adequate supplies of food for soldier. They offered a prize of 12000 francs to anyone who could come up with a new way of preserving food so it could be transported over long distance.

When Napoleon came to power in 1799, no one had solved the problem. Six years later Appert submitted his preserved food at an exhibition. He was given the 12000 francs four years later on the condition that he made his findings public.

In 1810, Appert did publish a book, The Art of Preserving All Kinds of Animal and Vegetables Substances for Several Years, which was translated into English and published in New York two years later.

The invention of Pepsi-Cola by Caleb Bradham

Caleb Bradham who was a pharmacist opened the drugstore called Braham’s Pharmacy in 1892. A great part of his business came from selling drinks, sandwiches and sundries. He also found it as fun to mix delicious soft drink as it was to make medicines.


He wanted to create something that taste good and was also healthy. Braham then experimenting with different formulas came up with one that was very popular with the local clientele. In 1893, he created “Brad’s Drink,” made from a mix of carbonated water, sugar, vanilla, rare oils, nutmeg, and cola nuts.

This created syrup. The syrup would be mixed with carbonated water to make a soft drink. Bradham later renamed his drink “Pepsi-Cola” on August 1898, after the pepsin and cola nuts use in the recipe.

He believed the drink was more than refreshment but a “healthy” cola, aiding in digestion, getting its roots from the word dyspepsia, meaning indigestion. By 1900, Pepsi-Cola had become so popular, that Braham started the Pepsi-Cola Company.

Invention of Melitta coffee maker

Melitta Coffee Filter and a popular drip system that goes with it including special pot, was invented by Melitta Bentz of Dresden Germany in 1908.

This is because she wanted better coffee for her family. She was looking for a way to brew the perfect cup of coffee with none of the bitterness cause by over brewing.

Melitta decided to invent a way to make a filtered coffee, pouring boiling water over ground coffee and having the liquid be filtered, removing any grinds.

Melitta did many experiments with different materials, until she found that her son’s blotter paper use for school worked best. She pierced holes in a tin container, put a circular piece of her son blotting paper in the bottom of it, and put this creation over the pot, and having coffee filtered.

The Melitta Automatic drip Coffee Maker was patented by Melitta Bentz in Germany on June 20th, 1908. At the Leipzig trade fair of 1909, she sold over 12 of her “coffee makers.”

Invention of the Smiley Face by Harvey Ball

The smiley face represents the American spirit of friendship, happiness and peace. The smiley face was created in 1963 by an American commercial artist named Harvey Ball. Ball was asked to come up with a symbol for an insurance company to use.

The company wanted employees to feel cheerful about working for the company when they saw smiley face, in order to help ease the acrimonious aftermath following the merger of two insurance companies. B

all drew something very simple and made the background yellow because it reminded him of the sun. In 1970 Bernard and Murray Spain added the words ‘Have a nice day,’ to the smiley face.

By 1971 at its peak of popularity, more than 50 million smiley face button were sold.

The Harvey Ball World Smile Foundation was established in 2001 to honor the name and memory of Harvey Ball. The first day in Oct each year is celebrated as World Smile Day with theme for the day is ‘Do an act of kindness, Help one person smile’.

Although Harvey Ball never wished to profit from the smiley face, the symbol still became a marketable fad in the United States, appearing on clothes, mugs and all kinds of merchandise.

Invention of washing machine

For centuries, people beat clothes on flat rick at the edge of a stream or lake. By the height of the Roman Empire, most wealthy people had graduated to tubs, whose sudsy water was dump into  a stream or alleyway by servant after the wash.

The earliest reported illustration of a washing machine was said to have been cited in 1629 German book by Octavias Strada von Rossberg, The machine was reported to have been invented in the last half of the 1400s by an Italian, Jacopa de Strada.

In 1805, the US patent Office issued the first American patent for hand-operated washing machine. By 1880, the Patent Office had granted more that 4000 patents for hand operated washing machines.

In 1870, the first tub with a drain plug appeared on the market. The owner was however responsible for building a trough or drain line from the tub to a safe outdoor dump spot.

In 1880, several American companies offered washing machines that included a built-in firebox to heat the water in the washer.

It is widely reported that A.J Fisher, an employee of Hurley, first invented the electric washing machine with his patent (966677) dated August 9, 1910. Although Fisher’s patent pictures and electric motor on his washer, the patent description only mentions the motor in passing.

The resulting ‘Thor’ electric washer was produced by the Hurley Machine Company of Chicago. A year later, in 1911, another electric machine was produced by Lou Upton and his uncle Emory. Lou had patent on a manual washing machine, and Emory ran a machine shop.

In 1922 the Maytag Corporation began producing agitator washing machines. These new machines were a big improvement can use coin-operated machines in laundry rooms in their apartment buildings.

It was not until 1937 with the introduction of automatic washing machines that an operator was no longer required to perform the various steps of washing, rinsing and wringing.

Invention of milk chocolate

Milk chocolate was invented by Daniel Peter of Switzerland in 1876. The ground cocoa nib was processed with sugar and milk solids and the result was a product that today is the mainstay of the chocolate industry.

Daniel Peters drew his inspiration for producing milk chocolate from Henry Nestlé own success in combining milk, wheat flour and sugar for infant cereal. Daniel Peter came up with the idea of using Nestlé’s milk powder in a new kind of chocolate.

Later Daniel Peter merged his business with that of Charles-Amedee Kohler, who is credited with inventing nut chocolate, to establish Peter and Kohler Swiss General Chocolate Company in 1904.

Cadbury’s Dairy Milk Chocolate was developed in the early 1900s and similar products by many other manufacturers followed.

Since that, the popularity of milk chocolate has increased astronomically and with the development of mass production molding machines that have helped to reduce its manufacturing cost.

The invention of popcorn machine by Charles Cretors

The original method used to popcorn was to hold and shake a wire basket filled with raw corn kernels over an open flame or fire.

Charles Cretors was the first of Chicago to develop a steam-driven machine in 1885 to popcorn in such volume that it could be sold from street wagons propelled first by hand, then by horse and finally by gasoline motor.

Creator got a license to operate his machine on the street and the rest was history. The Cretors machine automatically popped corn in a mixture of one-third clarified butter and two-third lard and salt. He was the first to use oil. The result was a machine that popped corn in its own seasoning – uniformity for the first time.

A gasoline fueled wet (oil) popping machine which was also had a small compartment for roasting peanuts. It was patented in 1893 and shown at the Columbian Exposition that year.

These carts were quickly seen on every street following the hungry crowds.

The machine could roast 12 pounds of peanuts, 20 pounds of coffee, popcorn and bake chestnuts as well.

Invention of cellulose acetate

The acetate of cellulose was first prepared in 1869 by the French chemist Paul Schutzenberger by reaction of cellulose with acetic anhydride.

The reaction was not easy to carry out, and it was not until 1894 that it was found that the reaction could be greatly facilitated by the use of sulfuric acid as catalyst. The product was the triacetate, in which each of three hydroxyl groups of the glucose rings of cellulose are acetylated.

In 1904 George W. Miles, an American chemist invented cellulose acetate as a safer alternative to celluloid. Cellulose acetate finds use as a synthetic fiber but has very steep competition from other polymeric fibers epically polypropylene and polyester fibers.

In 1905 Swiss chemist Dr. Henry Dreyfus furthered this work and created cellulose acetate, less flammable thermoplastic than Hyatt’s celluloid, and produced a ‘dope’ of cellulose acetate dissolved in acetone. The primary use of this dope at the time was for the wings of fighter aircraft used in the 1914-1918 war.

Henry later launched a business with his brother, chemist and industrialist Camille Dreyfus.

Used in injection molding, the material they made took shape as food packaging, refrigerator dishes and trays, egg cups and place mats.

History of nylon

From medieval times until the late eighteenth century, leaders and lines were made from twisted horsehair. Horsehair is neither transparent nor particular storing.

Nylon was first developed by Wallace Carothers (1896-1937), a chemist at the DuPont Company in the USA.

The Harvard Professor Carothers and his team produced a preliminary fiber at DuPont in 1927 and worked out chain condensation compounds with associate Julian W. Hill in 1930.

On February 28, 1935, he achieved a mix of penta-methylene-amine, sebacic acid and xylenol. The first successful super-polymer, initially called ‘polymer 66’ and the ‘nylon’ filled market needs.

In 1938 DuPont started the manufacture of nylon-6,6.

In parallel development, Paul Schlack of I. G Works at Berlin-Lichtenberg in Germany developed AB-type polyamides by homopolymerization of cyclic lactams, and nylon-6, derived from caprolactam was introduced in 1939.

Two years later, nylon was introduced to the public and became famous as an ingredient in ladies stockings, which are still called ‘nylons’.

Nylon uses in parachute fabrics and ladies’ stockings resulted from its toughness and durability. After 1945, markets developed for nylon as the first ’ease of care’, ‘wash and wear’ fabric due to the ability to give a permanent set.

At the beginning of the 1950s, nylon was the dominant synthetic fiber. The global output of nylon in 1959 was 421,000 metric tons, of which all but 71,000 tons was in the United States and Western Europe.

Invention of magnetron

Magnetron origins date back to the work of H. Barkhausen and K. Kurz in Germany, who described the shortest waves that could be produced by vacuum tubes, in 1920.

The earliest form of magnetron was described by Albert W. Hull of GE in 1921. Hull’s magnetron is simply a diode with a cylindrical anode. It was described publicly in the AIEE Journal in 1921.

W. Pistor published a paper dealing with the reception of ultra short waves in 1930 and in 1935 the travelling wave microwave oscillator (a type of early magnetron) had been invention by O. Heil and A. Heil.

In Britain, the possibility of using radar waves to detect aircraft arose in the early 1930s and work on magnetrons started at the GEC Hirst Research Center (Wembley) in 1931.

A highly important contribution was the invention of the cavity magnetron in November 1939 by John Randall and Harry Boot at the University of Birmingham.

On 21 February 1940, Boot and Randal verified their first microwave transmission with their prototype magnetron. Within days, they were generating an astonishing 500 W of output power at over 3 GHz, an achievement almost two orders of magnitude beyond the previous state of art.

Their invention enabled the development of radar systems with sufficient spatial resolution to distinguish enemy aircraft from those of the Allies.

Video conferencing system

Videoconferencing is a telecommunications medium that allows individuals or groups at different locations to transfer video and audio in real-time, face-to-face settings.

Simple analog videoconferences could be established as early as the invention of the television. In 1927, when Herbert Hoover was US Secretary of Commerce, he used a videoconference system in Washington to communicate with AT&T President Walter Gifford in New York.

This was a prototype system, but AT&T continued pursuing the idea developed the Picturephone in the 1950s and launched the commercial Picturephone product in 1970. It was a commercial failure, mostly due to poor picture quality and the lack of efficient video compression techniques.

In 1964 Bell Labs launched their first prototype of videoconferencing system. However, limited by the networks and other technology, videoconferencing system was brought into market only in 1980s with the development of codec protocol.

During the 1970s, some private videoconferencing links were set up by some very large organizations using analog technology.

Video conferencing saw advancement and development in the 1990s  due to many factors including technical advances in Internet Protocol (IP) and also more efficient video compression technologies that were developed, permitting desktop or PC-based video conferencing.

In 1991, IBM introduced the first PC—based video conferencing system, named PicTel. Although it was a black and white system, it was very inexpensive to use. It was the first dedicated systems, started to appear in the market as ISDN networks were expanding throughout the world.

Invention of Global Positioning System

By far the most well-known and widespread system currently used for localization of a radio-receiving terminal is the global positioning system (GPS), invented and designed in the 1970s and fully operational since the 1990s.

Many scientists worked in the various research teams developing GPS, but three men in particular have received multiple awards for their work.

Ivan Getting, a physicist and electrical engineer at MIT, established the basis for GPS, improving on the Second World War land-based radio system called Loran (Long Range Radio Aid to Navigation).

The idea of GPS emerged from his experiences during World War II, which made him realize the importance of knowing exact locations in combat.

Space satellites opened up the possibility of a new global navigation system.

Day to day development and management of GPS during 1970s was the responsibilities of Colonels Bradfr0rd Parkinson of the air force. Bradford Parkinson was a USAF colonel and a professor of aeronautics and astronautics at Stanford University, who conceived the present satellite-based system in the early 1960s, and developed it in conjunction with the US Air Force. His idea of using satellites is to replace the outdated aviation-related instrument Landing System and the expensive Microwave Landing System.

Getting remained involved nonetheless, and another person was Roger Easton. Roger Easton is the principal inventor and designer of the GPS, and in 1955 he co-wrote the successful proposal of a US satellite programme, name Project Vanguard.

Easton was the inventor of TIMATION (Time Navigation) in his patent entitled Navigation System Using Satellites and Passive Ranging Techniques.

The current GPDS is based on the TIMATION system, and their principles of operation are fundamentally identical.

The NAVSTAR-GPS project was officially launched in 1973 by the US Department of Defense to design and deploy a positioning service with global coverage and continuous-time availability.

The first satellite was first launched into orbit in February 1978. The air force keeps twenty-eight satellites in orbit at all times, four as backups to ones that might fail.

The GPS was originally developed for authorized military use only, and subsequently was released for civil users in 1983.

In 1989, the first satellite for the current GPS was launched and by 1994 the last of the 24 satellites was launched, creating what is the NAVSTAR satellite system.

The invention of microscope

In the second quarter of 11th century Abu Ali al-Hassan ibn Al-Hassan ibn al-Haytham or al-Hazen, a Persian mathematician and astronomer wrote his treatise Kitab al-Manazrir described the law of rectilinear propagation of light and of reflection and refraction.

In 1590 the Dutch spectacle makers Hans Jannssen and his son, Zacharias built a metal tube to hold the two lenses and they first to invent a microscope but had no real idea of what to do with it.

In the 17th century, advances in optics such as the law of refraction, geometrical optics, ray tracing and Christiaan Huygens’ theory of light contributed to advance in microscopy.

The word microscope was coined in 1625 by Giovanni Faber. He used it in a letter describing an invention by Galileo. The instrument to which it applied was not what recognizes today as a microscope, it was a telescope adjusted so as to view nearby objects.

In 1652, Dutch cloth merchant Anton van Leeuwenhoek took up where the Jannssens left off. He constructed a single-lens microscope in 1675 using a small double-convex lens with maximum magnification of about 270x.

Before the invention of microscope, microorganisms were invisible and hence apparently non-existent. In the year 1665, Robert Hooke an Englishman, declared that the smallest unit of life were ‘Cells’.

The single-lens microscope was developed further in Italy and Holland, but it is as the screw-barrel microscope of James Wilson of England that it was best known.

The first move towards precision construction was made in 1744 by John Cuff. His microscope was made of brass and based upon a famous earlier design by Edmund Culpepper.

The microscope was used for medical and scientific purposes by Athanasius Kircher of Fulda. In 1658 in Rome, he wrote his publication Scrutinium Pestis.

In 1903 Richard Zsigmondy and Wilhelm Siebenkoph, while working at Carl Zeiss in Jena, invented the ultramicroscope.

Ultramicroscope can detect colloidal articles that are much smaller than the calculated classical limit of resolution in an optical microscope.
